If you, like me, need a lot of extra fiber, here’s a great recipe to add as a side during a holiday meal.  It’s an easy, simple salad that is delish and no one else is going to bring to holiday dinners, making you look like a stand out hero.

I don’t think it has a name so I’m going to call it the “Pecmap Goatbal Pear” salad. It’s fresh greens mixed with goat cheese, candied pecans, cherries, pears, and maple balsamic dressing. You’ve probably already got the ingredients for that dressing at home: maple syrup, balsamic vinegar, salt, and some Dijon mustard. Then toss it all together. Thinking about it is making me hungry for goat cheese.
