The Caribe Royale Hotel in Orlando is displaying this magnificent confection known as their North Pole Express. It’s very detailed from the train engine down to the railroad ties and even the “gravel” that’s in between them. It’s all chocolate. The chef who puts it together grinds chocolate down into a silly putty type of consistency and then hand molds everything. Altogether, it took 1,600 pounds of chocolate to do it. To paint everything, they use colored cocoa butters.
