My Facebook memory today pulled up a recipe idea I had years ago, but forgot about; Pumpkin Spiced Tacos. Everyone knows that I like to experiment with foods and at first this sounds crazy. However, I tried putting cinnamon in my taco meat a couple years ago and use it every time now. Well, I wouldn’t use it if I was using pumpkin spice. I’ve also used sweet potatoes in enchiladas. I got the idea from old school, straight out of Mexico recipes that used potato chucks as filler. Sweet potatoes with red chili sauce is pretty good. I don’t imagine that it would be a big stretch to use pumpkin as an enchilada filler. Or even pumpkin picante sauce.
Actually, I’m not the 1st person to think of this. I just found a video with a recipe for Pumpkin Spiced Chicken Tacos. It also involves heavy cream. Interesting.
