Rihanna crazy as me about mac n cheese!

Everyone knows about my love affair with Mac and Cheese and all the different things I try adding to it. And most people think I’m crazy. Well then, I guess billionaire/ superstar Rihanna is crazy too. A mac and cheese recipe she shared with Esquire magazine in 2014 is making the rounds on the internet. Rihanna likes to add bell peppers, mustard, green onions, ketchup, and Scotch Bonnet Pepper sauce. Even I would think twice about adding that pepper sauce because of the high spicy heat level. But the idea is to make it sweet and spicy. I’m willing to give it a shot this weekend. I might even add a drop of rum to go with the Scotch Bonnet Pepper Sauce which is used a lot in Jamaica and Barbados.

I watched several reviews of the recipe and everyone one of them think it’s great.

Here’s the full recipe if you’d like to try it. Maybe tee it up for the tailgate this weekend. It seems like a LOT of cheese to me, but I’ll find out when I make it.

  • 2 cups small elbow macaroni noodles
  • Salt, for pasta water
  • 1 medium white onion, grated
  • 1 red bell pepper, julienned
  • 6 green onions, chopped
  • ¼ cup yellow mustard
  • ¼ cup ketchup
  • 1 ½ tablespoons Jamaican Scotch Bonnet Pepper Sauce
  • 3 1/2 cups Colby Jack cheese, shredded
  • 1 cup water
  1. Cook the macaroni noodles and drain, leaving about ¼ cup pasta water in the pot.
  2. Return the macaroni to the pot and put back on the stove on a low flame. Stir in the onion, bell peppers, and green onions until combined.
  3. Stir in ketchup, mustard, and pepper sauce until combined. Add cheese a handful at a time, stirring regularly. If the sauce is too stiff, add more water to reach desired consistency.
  4. Top with more green onions and serve immediately.
