Just when you thought the egg prices situation couldn’t get any worse, now you have to pay a surcharge.
Waffle House is adding a 50 cent extra charge, sort of like luggage fees, to every egg you order there.
They released a statement saying, “The continuing egg shortage caused by HPAI (bird flu) has caused a dramatic increase in egg prices. Customers and restaurants are being forced to make difficult decisions.”
According to records, Waffle House serves up around 272 million eggs a year. I don’t know what they pay for eggs, but the extra charge means $236 million extra dollars for them.
Also, don’t hold your breath waiting for prices to come down. The CEO of the American Egg Board said, “We’re in this for a while.”
Jenny and I usually have eggs around for baking and less for cooking them on their own. I started using substitutes a month ago. A mushed up, ripe banana works great in cakes. Other items you can use for baking instead of eggs include tofu, applesauce, yogurt, chickpea liquid, and buttermilk are some of the good ones. Bonus, if you already have milk, lemon juice, and 15 minutes to spare, you can make your own buttermilk any time you want.
