I have a recipe for a cold and refreshing treat that I specifically pulled out to have after spending a long hot day at work. This will come in really handy as we go into a heat warning that’s going to last from Friday morning through Sunday night. Also, it’s a no bake, quick and easy recipe.
It’s Frozen Margarita Mousse.
Gather lime juice, Cool Whip, sugar, sweet condensed milk, and ready to drink non-alcoholic margarita mix. That’s basically all you need, but you can fancy it up pretty easy by adding some lime zest, salt, and pretzels. Prep’s about 5 minutes and then you stick it in the freezer for a bit. Bottom line, while it’s literally 105 degrees out, you’re going to be chilling.
It’s got a nice mix of sweet, salty, and a little sour and you’re going to love it. Here’s the full recipe.
Ingredients:
- 1 can sweetened condensed milk
- 1/2 cup ready-to-drink margarita mix
- 1 tablespoon sugar
- 1-1/2 teaspoons grated lime zest
- 1 tablespoon lime juice
- 5 drops green food coloring, optional
- 1 carton frozen whipped topping, thawed
- PRETZEL TOPPING:
- 1/3 cup finely crushed pretzels
- 4 teaspoons butter, melted
- 1 tablespoon sugar
- Lime slices
Putting this cool treat together:
Combine first 5 ingredients; mix well. If desired, add green food coloring. Fold in whipped topping.
For pretzel topping, combine pretzels, butter and sugar. Spoon lime mixture into 6 glasses; top each with about 1 tablespoon pretzel topping. Freeze until firm, 4-6 hours. Serve frozen with lime slices.
