Strawberry Rhubarb Ice Pops Recipe!

The weather people are saying we’re in a heat wave that’s going to last until the end of the month. So, I’ve sharing another easy to make, creamy, sure to cool you down, summer desert recipe. Today it’s Strawberry Rhubarb Ice Pops!

All you need is some strawberry yogurt, sugar, rhubarb – frozen is fine, strawberries, applesauce, and water. Making these will start out a little like making jelly because you’re going to boil the rhubarb for a few. But, after that, it’s just mixing everything and then freezing.

I love using popsicle molds because they remind me of store bought popsicles when I was a kid. But, you can use any container with a popsicle stick. In fact, I’ve found that kids love to pick out what they want to use like extra-large cups or fun shaped ice cube molds. The end result is always the same. These are tasty, delicious, and cold treats. Here is the recipe.

Ingredients

  • 3 cups chopped fresh or frozen rhubarb (1/2 inch)
  • 1/4 cup sugar
  • 3 tablespoons water
  • 1 cup strawberry yogurt
  • 1/2 cup unsweetened applesauce
  • 1/4 cup finely chopped fresh strawberries
  • 8 freezer pop molds or 8 paper cups (3 ounces each) and wooden pop sticks

Directions:

Place rhubarb, sugar and water in a large saucepan; bring to a boil. Reduce heat; simmer, uncovered, until thick and blended, 10-15 minutes. Remove 3/4 cup mixture to a bowl; cool completely. (Save remaining rhubarb for another use.) Add yogurt, applesauce and strawberries to bowl; stir until blended. Fill each mold or cup with about 1/4 cup rhubarb mixture. Top molds with holders; top cups with foil and insert sticks through foil. Freeze until firm.
