Time to set you up with a new tailgate recipe for this week. We’re going to jazz up some guacamole with bacon and blue cheese. As always, it’s easy to make, you can do it fairly quickly, and lots of flavor.
There’s the usual stuff for guac: avocados, lime, and garlic. But, we’re also going to toss in some of my favorite kind of onion, a red, tomatoes, blue cheese, and bacon. The recipe says 5 slices, but go wild. I’ve never met a recipe’s bacon amount that was enough for me. The more bacon the better.
Also, the blue cheese. Jenny loathes blue cheese. At our house, that just means more for me. But feel free to substitute another cheese. Or, anything with a bit of sharp flavor in it. Or, use the blue and tell anyone who doesn’t like it, “Boo Hoo!”. It’s more for you.

Ingredients
- 3 ripe Avocados, halved and pitted
- 1/2 lime, juiced
- 1 clove garlic, minced
- 1/2 teaspoon kosher salt
- 1/2 red onion, diced (about 1/2 cup)
- 1 tomato, seeded and chopped
- 5 slices bacon, cooked and crumbled (about 1/2 cup)
- 1/3 cup crumbled blue cheese
- freshly ground black pepper
