How do Christmas Tacos sound as an alternate holiday dinner idea? Instead of ground beef, these tacos have short rib meat in them. It’s seasoned with ancho chiles, pomegranate juice, and because it’s the holiday season, some cinnamon. Best of all, it’s cooked in a slow cooker. You won’t have to spend days defrosting and 5 hours in an oven. The hardest part will probably be removing the seeds from pomegranates. There’s also a special pomegranate Pico de Gallo to use. If not Christmas day, this would probably be a great dinner the night before Christmas. It’d probably pair really well with a nice red wine. Maybe Lebron James would have a good suggestion for one.
