I found a sweet recipe for Christmas Mac and Cheese. So, it should be no surprise that I was able to find one for New Year’s celebrations. Honestly though, I don’t know if I’ll be making it. Not because it looks yucky. Rather, I’ve never heard of most of the types of cheese that it calls for and I have severe doubts that I’d be able to find them anywhere in Nebraska. They all sound very continental: camembert, Leicester, and gruyere, and pecorino.
I was really hoping I could find a recipe that involves champagne……… and I did. It still calls for gruyere, but the rest of the ingredients are easily found like white cheddar. It also lists “edible flowers”. Gonna pass on that, but hyped about the ¼ cup of champagne. It’s supposed to add a bit of sweetness to it….. much like the small amounts of ketchup that you should dip your mac and cheese in from time to time.
