Alternate Irish dish for St. Patty’s Day; Boxty recipe.

I saw corned beef the other day that cost 9 dollars a pound! Another brand was 7 bucks a pound. If you’re like me and that seems a bit cost prohibitive this year, I’ve been looking up some alternate Irish themed recipes that you can make instead. How about Irish Boxty? It’s basically pancakes, but think potatoes. You have some mashed and grated potatoes. Add in some buttermilk and baking powder and then toss on a griddle or pan. It’s almost like pancakes and hash browns in one. They go good with chicken, beef, or regular breakfast stuff like bacon and eggs.
