Food scientists have created a new type of ice that stays cold as long as ice, has water in it, but does not melt. Say hello to Jelly Ice. It’s basically a Frankensteined version of Jello that traps water. They can be used over and over again and are biodegradable and compostable. You can toss them in the garden when done and they’ll actually help. But, my favorite part is that you can turn them into whatever shape you want before tossing in the freezer. After thawing, you can reshape them. They’re looking at using these for shipping materials. In laboratories, and at home.
And I don’t want to get ahead of things, but I read some of the scientific material on their research. One thing they’ve done is been able to control the size of ice crystals that form inside things that are frozen. That’s important because when things are frozen, these ice shards develop in the skin, flesh, and cells of things destroying their viability. It’s also one of the problems with trying to freeze people for hibernation. Those shards can destroy cells from the inside out. But, if they can control it, it’s one more step closer to taking a nap until flying cars come around.
