I have been running the idea of creating cookies that have cake mix in them through my head for a long time. So, it was another weekend of baking experiments. I made German Chocolate cake mix and some cookie batter. Then I did various combinations of the two and baked them as cookies. Also, I added crumbled bacon to the mix. It turned out……. Meh. They’re nice and soft and chocolatey, but not outstanding. The bacon didn’t really add anything. I needed something bigger flavor. So I baked two cakes. One had everything I mentioned in it. The other had all of that PLUS brownie batter. And I topped each one with coconut/ chocolate frosting. I think those turned out great. Jenny’s not such a fan. The brownie one tasted better to me, especially with the bacon. I think next weekend that I’m going to made plain brownies with bacon in them. Maybe with some cream cheese frosting.
