I bought a pumpkin 3 weeks ago and forgot to carve it until today. It’s big and heavy so I set it down out of the way when I first brought it come. The I guess that I quit noticing it whenever I walked by. You know how when something becomes so familiar that it never catches your attention? That happened. Speaking of, if anyone else carved theirs today and still have the seeds, here are some tips on roasting the seeds for snacks. You can always go the usual salt and cooking oil route. But I suggest adding some zest, with chili or garlic powder. Cinnamon and sugar is really good. You dips them in melted butter and then roll them in a cinnamon and sugar mix before roasting at 350 for about 25 minutes. Delish has a page set up with all sorts of different ways to flavor the seeds including Pumpkin Pie flavored pumpkin seeds that use brown sugar. Yummy.
