For those who have to give up meat on Fridays, I’ll be posting ideas and recipes for tasty, sinless meals. Tonight, I suggest taking the chicken out of quesadillas and filling them with spinach and mushrooms instead. Here’s how easy it is. Get a can of mushrooms or pick out the kind you want fresh, Slice them and sauté in olive oil over high heat for a couple of minutes. Set to the side.
Spray some non-stick stuff on a separate skillet and let it heat up to medium while you do the next step.
Chop up some spinach or thaw out some frozen. Put two cups in a bowl with a cup of mozzarella cheese, ¼ a cup of sour cream, 1/4 a teaspoon of garlic, and a couple pinches of salt. Mix it up. Slap as much of it as you want
and some mushrooms on a tortilla then fold it over. Set it on the skillet that’s been heating up, Flip it over about once a minute until the insides are heated and the outside is slightly crispy.
Also, you can use any kind of filler and cheese you’d like. Try garlic and shrimp with a pepper jack cheese and red onions. Or fish with cream cheese and peppers. Have fun with it.
