Happy National Pi Day………….. 3.14 and all that. In honor of the fact that we love pies that you can eat and don’t love math as much, I’m sharing a PIE recipe that is made out of a couple of my favorite ingredients; cheese and strawberries. It’s the Strawberry Cheesecake Pie.
But it says “cake” in the name! How can it be a pie too? Calm down. It’s a lot creamier than cheesecake making it more like a satin pie. Also, it’s no bake. So, easy cheesy……. Pie. You can eat this any time, but it’s really good on a warm afternoon, which we’ll have plenty of soon.
Here are the ingredients:
— A pre-made graham cracker crust.
— 3/4 cup of heavy cream
— 1.5 blocks (18 total ounces) of softened cream cheese
— A cup of powdered sugar
— Half a cup of strawberry preserves
— Half a cup of chopped strawberries
Directions:
- SIn a medium bowl using a hand mixer or in the bowl of a stand mixer, beat heavy cream until stiff peaks form.
- In a large bowl, beat cream cheese and powdered sugar until smooth. Add strawberry preserves and beat until combined. Fold in strawberries, then fold in whipped cream until just incorporated.
- Pour filling into crust and refrigerate until well chilled, at least 4 hours.
- Garnish pie with more strawberries when ready to serve.
