Strawberry Cheesecake Pie recipe for Pi Day!

Happy National Pi Day………….. 3.14 and all that. In honor of the fact that we love pies that you can eat and don’t love math as much, I’m sharing a PIE recipe that is made out of a couple of my favorite ingredients; cheese and strawberries. It’s the Strawberry Cheesecake Pie.

But it says “cake” in the name! How can it be a pie too? Calm down. It’s a lot creamier than cheesecake making it more like a satin pie. Also, it’s no bake. So, easy cheesy……. Pie. You can eat this any time, but it’s really good on a warm afternoon, which we’ll have plenty of soon.

Here are the ingredients:

— A pre-made graham cracker crust.

— 3/4 cup of heavy cream

— 1.5 blocks (18 total ounces) of softened cream cheese

— A cup of powdered sugar

— Half a cup of strawberry preserves

— Half a cup of chopped strawberries

Directions: 

  1. SIn a medium bowl using a hand mixer or in the bowl of a stand mixer, beat heavy cream until stiff peaks form.
  2. In a large bowl, beat cream cheese and powdered sugar until smooth. Add strawberry preserves and beat until combined. Fold in strawberries, then fold in whipped cream until just incorporated.
  3. Pour filling into crust and refrigerate until well chilled, at least 4 hours.
  4. Garnish pie with more strawberries when ready to serve.
