Most people use leftover turkey for sandwiches. I made turkey enchiladas. I mixed cranberry sauce and chipotle sauce to get a blend of sweet and spicy. I used that instead of enchilada sauce on the tortilla. Then I added some shredded pepper jack cheese. Next came the turkey. I finished with a few small chunks of cream cheese. I added a little extra sauce on top of each enchilada before covering the pan with tinfoil and baked at 285 degrees for around 45 minutes. Also make sure there’s a small portion of the tin foil that is open to allow venting. Otherwise leave it on the whole time so the sauce on top doesn’t crust up.
The best way I can describe what they taste like is this…………… like a dessert pizza, only an enchilada. They were sweet and creamy. It pretty much drowned out the turkey flavor. But, now we know what to do is you want to make baked dessert enchiladas; everything here sans the meat.
I also made turkey wraps using the cranberry sauce mixed with mayo, bacon, lettuce, and turkey that were delicious. I can’t take the credit for that idea. I learned I from a deli guy at Hy-Vee years ago.
