“Piggy Potatoes” is my new recipe. It also has a fun presentation that kids and adults will like.

I had leftover barbequed pulled pork and some russet potatoes I needed to use. So, Friday night, I thought I’d get cute with it. I baked some potatoes, cut them in half, and scooped them out to make mashed spuds. I took a couple of baby carrots and cut some circle pieces. I also cooked some bacon and half cooked curly fries.

Next,  I mixed some mashed potatoes with pulled pork and refilled the potato skins like you’d do with twice baked potatoes. Then, I put the halves back together. The potatoes help keep them stuck together. On the top front of each potato, I make a couple of small incisions. Then I cut corners off of the cooked bacon strips so that they were triangular. They fit into the incisions with the pointy part sticking out like ears.

Then I stuck the circle pieces of carrot on the front of each potato with toothpicks o that they looked like snouts. And finally, I took curly fries and attached them to the backside of each potato by squishing them in between the potato halves. Then it was back into the oven for my little potato piggies for a second baking. Serve o top of barbeque sauce like they’re mucking around in the mud.
