Being a foodie, amid all the tests and getting poked by needles at the hospital in Denver last week, I ended up talking about recipes and interesting meals with my primary doctor there. He suggested that we eat at a place called Bull and Bush Pub and Brewery. He specifically mentioned that they serve potatoes with green chili with pork in it on top instead of gravy.
Jenny and I were like, “Whaaa?” Then we both decided to we had to try it out. So we ate there on the last night we were in. We liked it so much that Jenny had me buy different kinds of green chili sauces once we got back to Lincoln and tried them out.
So far, the best kind we’ve found comes in a bottle called “Southwestern 50 Green Chili Sauce”. Not exactly the same, but it still tastes good on mashed potatoes.
I also found a recipe called Colorado Green Chili that looks like it’d work.
