Impress the guests at the cookout this weekend by grilling……… watermelon. I’ve got a couple of different ways to do it. Both are easy. Before anything, I suggest cutting the watermelon into big triangle slices with the rind left on. It’s going to be easier to handle and less likely to fall apart when handling. Once done, spread a little olive oil on each side.
From there, you can mix some honey with lime juice that you’ll coat the slices with before grilling on a medium high heat. Grill each side until you get those nice grill marks. Once on a plate, sprinkle a little cilantro on each slice.
Another way to grill them it to just sprinkle brown sugar on each side before grilling.
Of course, you can experiment with other spices. If you want to add some zing or spiciness, chili powder would work well.
