Austin’s new Cilantro Lime Chicken recipe

One day when I was out last week, I wanted to grill chicken and had it in my mind that it had to include lime and cilantro. Also, I didn’t want to run to the grocery store for any ingredients. Here’s what I had and what you’ll need.

– 1 lb large boneless chicken breasts

– 1/3 cup freshly squeezed lime juice

– 1/4 cup chopped cilantro (and more to garnish)

– 2 tbsps olive oil

– 1 tsp salt

– 1/2 tsp garlic powder

– 1/2 tsp onion powder

– 1/4 tsp cayenne

– 1 tsp honey

Take everything except the chicken and mix them together in a large dish or bowl. Then pound the chicken down some so that it grills more evenly. If you have a fat chicken breast, you should cut it down the middle into two pieces. Then use your knife tip to put little holes throughout the chicken breast. This will help the meat absorb more flavor. After all that, marinade the chicken in the sauce for an hour. Turn it halfway through so both sides marinade evenly.

Grill the chicken, cut into smaller chunks, and serve on tortilla chips with some cheddar or white quesadilla cheese and pico de gallo. I also added sour cream.
