Pumpkin Spice French Toast Recipe – Super easy- Vide in blog

– I heard someone the other day talking about the yearly “Pumpkin Spice-athon” that will hit us soon.  And I thought, “Why wait for the stores to bring it to us? Let’s start pumpkin spicing at home.” Over the next couple months, I’ll track down and share recipes for doing it yourself. For the 1st one, I picked my wife’s favorite breakfast item French Toast. It’s super easy.  Get some eggs, brioche bread, spice, vanilla, milk, and actual pumpkin puree. Mix, soak toast, than cook on skillet a few minutes. To add a little fancy, there’s instructions on making pumpkin butter to top it with. I’d usually add bacon, but I haven’t figured out how to make it with pumpkin spice yet.

Ingredients

French Toast

  • 4 large eggs, beaten
  • 3/4 cup milk
  • 1/2 cup pumpkin puree
  • 1 tsp. pure vanilla extract
  • 1/2 tsp. pumpkin pie spice
  • Kosher salt
  • 1 loaf brioche, sliced into 1″-thick slices
  • 3 tbsp. unsalted butter, divided

Pumpkin Butter

  • 4 tbsp. unsalted butter, slightly softened
  • 2 tbsp. pumpkin puree
  • 2 tbsp. maple syrup
  • 1/4 tsp. pumpkin pie spice
  • Kosher salt

Serve

  • Maple syrup, for drizzling
  • Powdered sugar, for dusting

Directions

French Toast

  1. In a shallow baking dish, whisk eggs, milk, pumpkin puree, vanilla, pumpkin pie spice, and a pinch of salt. Place bread slices into pumpkin mixture and let soak about 30 seconds per side.
  2. In a large nonstick skillet over medium-low heat, melt 1 tablespoon butter. Cook 2 slices bread at a time until golden, 3 to 4 minutes per side. Repeat to cook all slices.

Pumpkin Butter

  1. In a medium bowl, whip softened butter with pumpkin, maple syrup, pumpkin spice, and a pinch of salt until light and fluffy.
