My Frankenstein like baking experiment turned out awesome.

The idea of mixing cream cheese into corn bread got in my head last week. So, Sunday, I did some experimenting with baking. I pulled out three bowls. I made corn bread batter in one, yellow cake batter in another, and brownie batter in the third. Then, I made some muffins with corn bread and cream cheese. Don’t ask me how, but they came out fluffy, moist, and way less crumbly than usual. I also made muffins that were a mix of corn bread plus cake with the cheese and corn bread, cake, brownie, and cheese. They were tasty, but not as fluffy. After, I still had a lot of cake and brownie batter left over. So, I whisked them together with the remainder of the cream cheese and poured it all into a cake pan. That came out fantastic! It was more like a flavored bread than a cake. I didn’t add frosting. It would have taken away from it. I didn’t use measurement or I’d share the recipe. I think the best I could estimate is that it was 2 parts yellow cake, 1 part brownie, and about 4 ounces of cream cheese.
