This week’s Pumpkin Spice Make At Home recipe is Pumpkin Spice Granola. It looks a little daunting from the number of ingredients. Fear not. You’ve probably already got 90% of them at home like baking soda, honey, and vanilla. If your pantry is like mine, you’ll probably need to pick up the ones like almond butter and the pumpkin seeds. Besides that, it’s only a matter stirring a group of dry ingredients and a group of softer and liquid ingredients and then taking the two and mixing them all together. Then you line a baking sheet with ingredients and throw in the oven for half an hour. There are a couple of items you can change a bit. It says Kosher Salt, but any salt will do. Puffed rice is basically Rice Krispies or whatever generic form the store offers. If you know a runner or any outdoorsy people, they’ll love it this time of year.
You will need:
- 4 cups rolled oats
- 3 cups puffed rice
- 1 cup shredded unsweetened coconut
- 1 cup pumpkin seeds
- 1/2 cup brown sugar
- 1 1/2 tablespoons pumpkin pie spice
- 2 teaspoons kosher salt
- 3/4 teaspoon baking soda
- 1/2 cup honey
- 1/2 cup extra-virgin olive oil
- 1/2 cup pureed pumpkin (from 1 [15-oz.] can of pumpkin)
- 1/2 cup almond butter
- 2 teaspoons vanilla extract
Throwing it together:
Preheat oven to 325°F. Line a rimmed baking sheet with parchment paper and set aside. In a large bowl, combine oats, rice, coconut, pumpkin seeds, brown sugar, pumpkin pie spice, kosher salt, and baking soda.
